What to pay attention to when choosing coffee

How to choose a coffee variety?

When getting acquainted with our beans and the world of specialty coffee in general, we recommend starting with the basic Culture line, as well as the Passion line. Coffee from these categories is accessible, with a fairly simple and understandable taste.

If you are an avid coffee enthusiast or want to try something new, feel free to try Impressoin and Boutique lots.

Pay attention to the taste descriptions of the lots. And if you need help choosing, [link:write to us], and we will help.

How to choose the roast level?

We offer medium and light roast coffee.

Choose espresso roast if you brew coffee in an espresso machine. For all other brewing methods, filter roast is the ideal option, as it is slightly lighter.

To grind coffee or not?

The most ideal option is to grind a portion of coffee immediately before brewing. This way the coffee will be maximally tasty and aromatic, and will also last longer.

If this is not possible, we can grind the coffee for free upon your request. Select the desired grind level when adding the product to the cart.

A hand coffee grinder will soon be available in our store in the [link:Accessories] section.

How best to store coffee?

It is best to store coffee in our branded packaging, which has a zip-lock and is equipped with a special degassing valve, so it is airtight and does not let air inside. This way the beans will retain their flavor and aroma properties longer.

It is important to ensure that the beans are not exposed to temperature fluctuations and high humidity. For storage, choose a dry and dark place, such as a kitchen cabinet.

COLOMBIA DARK SAILOR

COLOMBIA DARK SAILOR

29 €

Lot: Dark Sailor Country of Origin: Colombia Region: Caldas Producer: Guillermo Alvarez Variety: Castillo Processing Method: Washed Rum Barrel Aged This coffee is processed using a traditional washed method: hand-sorting of cherries, depulping, and fermentation, the duration of which depends on weather conditions. Cherries harvested on the first day are depulped and fermented for 24 hours. A second batch, harvested the following day, is then added, and after 12 hours the combined lot is washed and sun-dried for approximately one and a half weeks. After drying, the coffee is sorted by size, with only the largest beans (screen size 14+) selected. An electronic sorting system is used to remove lower-density beans, quakers, and other defects. The green coffee is then aged for three months in oak barrels that previously held rum. The wood retains aromatic compounds from the spirit, which gradually influence the coffee during storage. To ensure even contact between the beans and the barrel walls, the barrels are rotated daily throughout the aging period. This is a coffee that is hard to forget. As an espresso, it evokes a shot of aged dark rum — bold, spicy, sweet, and warming. With milk, it becomes even more expressive, as the rum character enhances both sweetness and creaminess. The finish is exceptionally long and lingering. Alongside the rum notes, the cup reveals layers of spice, vanilla, raisin, and prune. A rare and exclusive lot. Aging green coffee in barrels previously used for spirits is a relatively new approach in coffee processing. A significant portion of these coffees is exported to Asian markets, particularly China. The high price of this lot reflects the lengthy and labor-intensive production process, which takes several months to complete.
